Not every Michelin bib recommended is good. But when it comes to oyster egg omelettes they definitely got it right. Yuan Huan Pien Oyster Egg Omelette 圓環邊蚵仔煎 is a must eat when visiting Taipei’s Ningxia Night Market. They have been Michelin recommended for 7 years from 2018 to 2024! They opened in 1965, so they’ve been a staple of the night market over 60 years now. Here’s everything you need to know about eating there, what to order, and how to get there.


Oyster omelettes or 蚵仔煎 (Orh Jian) is made up of sweet potato starch to give it that chewy and semi-crispy texture. It includes a generous amount of oysters unlike many other stores I’ve visited. Their oysters are from Tainan, and they’re very tender. It is then cooked with an egg, as well as bok choy green veggies. Its covered in a red sweet and savory sauce. The texture here is not as crispy, to me it is more chewy, and its just an explosion of delicious flavor. The sauce really makes it even better. They do use a lot of garlic so that does come through in the flavor of their omelete and sauce. It’s only 95 NTD, or $3.06 USD. (These prices are from January 2026)


They also have a fried sparerib soup that is so delicious, and warming (great for the colder weather), it comes with winter melon. The soup has the flavor of celery, and cilantro in it. It’s 85 NTD, or $2.70 USD. They also have their sparerib radish soup which is also good!
If you’re really an oyster lover, you can get a plate of Garlic oyster. It’s a bit rich though, so I still would suggest going for the omelet. That’s 180 NTD or $5.72 USD. I’ve also tried their Taiwanese pork sticky rice, but I did not really like it. This is not the same as Taiwanese braised pork rice!! I don’t recommend that at all, save your stomach for other things at the night market!


They’re open from 12pm-1am, and they take a break from 2:30pm – 4:30pm. Be prepared to wait in line, but it usually moves pretty fast. I don’t like waiting in line, and I will usually go early. But just a note if you do go early like 4pm or 11:45am… nothing else is open yet for the night market. You would have to wait around and hang out until then, if you go for lunch, just go to Zhongshan and hang out, or go to Beans Village and get some tofu pudding lol which I’ve done.
How to get there? Take the MRT and exit at Shuanglian (red line) station, Exit 2 Mackay Memorial Hospital, and walk 10 minutes to Ningxia night market. You can also take exit Zhongshan (green line) station, and walk about 15-20 minutes. I prefer exiting at Shuanglian because its a bit closer than Zhongshan.
